Frittata

Ingredients

  • ½ red onion, diced

  • 1 tsp crushed ginger (fresh or paste)

  • 1 tsp crushed garlic (fresh or paste)

  • 1 tbsp EVOO

  • 6 eggs

  • 1 zucchini, grated

  • 250g sweet potato, grated

  • 6x mini tomatoes, halved

  • 50g fetta cheese, crumbled

  • Salt & pepper to taste

  • Avocado to serve.

Directions

  1. Preheat oven to 170 C, line baking tray with baking paper

  2. Sauté onion, garlic & ginger in EVOO until tender

  3. Add zucchini & sweet potato & sauté until tender

  4. Spread across baking tray

  5. Whisk together eggs, salt & pepper

  6. Pour eggs into baking tray, place fetta and tomatoes over the top

  7. Bake for 35 mins or until set

  8. Cool slightly before slicing, serve with avocado.
