Frittata
Ingredients
½ red onion, diced
1 tsp crushed ginger (fresh or paste)
1 tsp crushed garlic (fresh or paste)
1 tbsp EVOO
6 eggs
1 zucchini, grated
250g sweet potato, grated
6x mini tomatoes, halved
50g fetta cheese, crumbled
Salt & pepper to taste
Avocado to serve.
Directions
Preheat oven to 170 C, line baking tray with baking paper
Sauté onion, garlic & ginger in EVOO until tender
Add zucchini & sweet potato & sauté until tender
Spread across baking tray
Whisk together eggs, salt & pepper
Pour eggs into baking tray, place fetta and tomatoes over the top
Bake for 35 mins or until set
Cool slightly before slicing, serve with avocado.
